Here is my super quick & healthy Vegan Lotus Biscoff Cheesecake recipe…
200g Biscoff spread ( Half jar)
360g Violife soft cheese
270ml Elmlea Double or Single cream
3/4 cup of Vegan icing sugar
10 Biscoff Lotus biscuits
1/2 cup of dates (soaked in hot water for 5 minutes)
1 heaped tbsp coconut (melted)
1 tsp vanilla
1/2 cup of oats
1.Blend (or finely chop the dates and mix well with the oats, coconutoil, crushed Lotus Biscoff biscuits & vanilla.
2. Press the mixture into the bottom of a loose base tin & set in fridge.
3. Mix 3/4 of the Lotus Biscoff spread with the soft cheese, double cream, icing sugar & vanilla with a whisk until smooth (Don’t worry if it’s not completely smooth and thick, it will set in the freezer).
4. Pour the mixture onto the biscuit base and drizzle the remaining Lotus Biscoff spread on top (20 secs in the microwave will help to loosen the spread making an easier drizzle).
5. Place in the freezer for a minimum of 4 hours. Leave to chill in the fridge 30-60 minutes before serving.
